Kafta Bi-Siniyyeh (Kafta in a Pan)

Kafta bi-siniyyeh is a Lebanese dish, this dish is very easy, simple dish to make and very delicious. I learned to cook this dish from my oldest sister (Rasha) she is married to Lebanese and she cooks both Iraqi and Lebanese dishes, it is a wonderful mix of Middle Eastern cuisine.

Kafta, is minced meat, onions, parsley, and spices. I usually add one egg and very little amount of flour just to hold the kafta in place. The dish is beautifully organized and looks very appetizing. One ½ inch cut round potatoes then a kafta patty then tomatoes then another piece of ½ inch cut round potatoes, that is nicely organized in a baking dish. A tomato sauce added over the dish and baked in an oven.


Ingredients


  • 2 Ibs ground beef, or lamb or turkey

  • 1 cup parsley, finely chopped

  • 1 cup cilantro, finely chopped

  • 1 cup green onion, finely chopped

  • 1 small onion, finely chopped

  • 1 egg

  • 5 tablespoon flour

  • Salt as preferred

  • 1 tablespoon black pepper

  • 1 tablespoon allspice

  • 1 tablespoon cumin

  • 1 tablespoon coriander

  • 1 tablespoon paprika

  • 7 medium potatoes, peeled, rinsed and ½ inch sliced into circles

  • 2 medium tomatoes, ½ inch sliced into circles

Instructions:


In a large bowl add ground beef, parsley, cilantro, green onion, yellow onion, egg, flour, salt, and HALF OF ALL THE SPICES black pepper, allspice, cumin, coriander, and paprika. Mix well, then make small patties that well fit the cut potatoes.

In another bowl add the potatoes and add the other half of the spices, black pepper, allspice, cumin, coriander, and paprika.


Take one of the cut potatoes then add the meat patties, add the tomatoes then add another cut potato and start to organize it in rows in a deep baking dish.


Add the sauce.


Ingredients for the Sauce


  • 8 oz can tomato paste

  • 4 cups of water

  • Salt

  • ½ tablespoon black pepper

  • ½ tablespoon cumin

  • ½ tablespoon coriander

  • ½ tablespoon allspice

  • ½ tablespoon paprika

Instruction for the Sauce:


In a bowl add the tomato paste add the water, salt, black pepper, cumin, coriander, allspice, and paprika and mix well.


Add the sauce over the baking dish of the kafta and potatoes.


Place in a heated oven of 400 degrees for about 30 to 40 minutes until the potatoes cook and the sauce thickens.
