Kabab with Basmati Rice

Baked Potatoes with Herbs and Spices, Veg on the Side

Ingredients:

Kabab:

  • 4 Ibs ground beef 

  • 2 cups cilantro 

  • 2 cups green onion 

  • 2 cups parsley 

  • 5 clove garlic 

  • 1 hot pepper 

  • 2 cups oatmeal 

  • 3 tablespoon ginger 

  • 1 tablespoon Cumin 

  • 1 Tablespoon black pepper 

  • 1 tablespoon curry powder 

  • 1 tablespoon coriander 

  • Salt as preferred

Instruction: 

Add the cilantro, green onion, parsley, garlic, ginger, and hot pepper in the food processer let it run for 2 minutes or until all the ingredient is blended, take it out of the food processer and place it in a large bowl.

Add ground beef, cumin, black pepper, curry powder, coriander, and salt.

Wet your hands and place the meat mixture onto a skewer. Take a scoop to form balls and thread them onto the skewer, then mash them together.

Place them of a cookie sheet and put them in a heated oven of 400 degrees for 20 minutes or until it is fully cooked.

Ingredient for the rice:

 

  • 2 cups of your favorite basmati Rice 

  • 4 cups of water 

  • Salt as preferred. 

  • 5 tablespoon olive oil 

  • 1 large onion chopped

  • 2 cups of dill chopped

  • Edamame beans

  • 3 pieces cardamom open

Instruction: 

 

In a large pot add olive oil, onion cook until its golden brown.

Add Edamame beans cook for 3 to 4 minutes.

Add the dill mix well.

Add the water, salt, cardamom and bring to boil, then add your rice.

After the water evaporates lower the heat and covers the pot tightly. The water should be in ½ inch above the rice.

Leave it for about 20 minutes, do not remove the cover of your pot until that time, do not use a spoon to flip or turn your rice it will crush the grain, Use a spatula or something flat.

 

Baked potatoes:

Ingredients for the potato:

  • 4 to 5 potato washed and cut into cubed      

  • Salt as preferred    

  • 2 tablespoon black pepper    

  • 2 tablespoon cumin 

  • 2 tablespoons sumacs 

  • 1 tablespoon paprika

  • 6 to 7 tablespoons olive oil  

 

Instruction for the potato:

Heat the oven to 400 degrees.

Wash the potatoes and cut into cubed leaving the skin on.

In a large bowl add the potatoes, salt, black pepper, cumin, sumacs, paprika, and olive oil mix well.

In a Greased cookie sheet add the potatoes.

Place in a heated oven for about 30 to 40 minute or until it is cooked

 

Veg side dish:

Ingredients:

  • 10 baby carrots cut into halves

  • 1 large green pepper cut into ½ inches

  • 5 mushrooms cut into halves

  • Salt

  • ½ tablespoon Black paper

  • ½ tablespoon cumin

  • ½ tablespoon paprika

  • 3 tablespoon olive oil

 

Instruction:

On greased baking dish place the carrots, green pepper, mushrooms, salt, black paper, cumin, paprika, and olive oil.  Bake in a heated oven of 400 degrees for 15 minutes.
