Thank you for a quick response. I want to learn to cook some of your dishes because I met a young Iraqi who has sought asylum in the US and he misses the home cooking he had back home. I’m Puerto Rican, yet I know if I cook an Iraqi dish might bring a smile to his face. He’s a friend of my (adult) children, and he was at our Giving Thanks dinner last night. My first dish to make for him will be rice - he expressed how much he missed rice. Which recipe would you suggest? And I’ll purchase that one. Again, thank you so much for the quick response.

This recipe is for free on the website. There is no need to purchase a rice cooker, but you need a good cover pot that closes tightly to cook the rice. There are many Recipes in Baghdad Cuisine that you can freeze, or you can cook and leave in the refrigerator for a few days. Also, many of Baghdad Cuisine recipe is very affordable to cook, healthy, low in calories and easy to make. These are some of these recipes and suggestions

 

Marqat bazila'(peas stew), Marqat Baytinijan (Eggplant Stew), Theses two dishes can be eaten with rice or pita bread and you can put in the refrigerator for few days, they would taste even better the next day. Chicken Shawarma Iraqi style, Batata Bel-lahm (Potatoes & Beef), Lahm b-'Ajeen (Meat and Dough), these 3 dishes can be easily put in the freezer and to be eaten at any time of the day.  Mukhalimuh Al-Eiraqiuh (Ground Beef and Eggs Iraqi style), this dish you can cook the ground beef and freeze it, heat up the ground beef again then add your eggs, very simple and easy dish to cook at breakfast time.  Kabab Maqley (Fried Kabab): Ground beef mixed with herbs and spices. This dish you can make it and put it in the refrigerator for a few days with no problems. This is a dish is like dough like you can cook what you need and return the rest in the refrigerator.

There are lots of sweets dishes in the Iraqi cuisine, the most popular Iraqi desert is Kleicha it is filled with dates. Some are filled with walnuts or coconuts also they add sugar to the filling.

Hi! I've found a recipe that is supposed to be an Iraqi dish on a Swedish website, but I cannot find it anywhere else. The blogger calls it "hamise", are you familiar with that? It looks like this: https://irakiskmat.se/hamise-irakisk-pyttipanna/

 

The ingredients are beef, eggplants, potatoes, tomato sauce, garlic, a yellow onion, noomi basra, and spices. Both the meat and the vegetables are chopped, not minced.

I am not familiar with the name of the dish, but as you describe the ingredients it could be Tabsey Baytinijan (Eggplants dish) you can check the recipe on my website. As I looked at the picture, there is a dish that the Iraq people usually make at breakfast time it has meat, onion, parsley, and potatoes, then they add spices, one of the spices is Kurkum (turmeric) to make the potatoes yellow in color as for the name is called potatoes and meat (check the recipe in the website).

 

As for the word Hamise, as I searched it on the Internet in Arabic, it is a Saudi Arabian dish. But it could be in an Iraqi dish in a different part of Iraq.

What is Butnag in English? The herb we put on boiled Badgella?

​Butnag is called Stachys or Betony.   Badgella is called fava beans

 

Stachys or Betony a plant species, is a rare and precious herb found in the Middle East region. Butnag is a very popular herb in Iraq. They add the Butnag with Badgella or fava beans when they cook the dish, also they use it in many other recipes for example in badgella with rice, badgella with pita bread and it is used with Lablabi (Chickpea) as well.

Thank you for creating such a wonderful site! I have a question regarding Samoon. It says 4 tablespoons of yeast. Is this correct and if so - what kind of yeast do you use? I have the granulated instant yeast. I’m trying your Lablabi next!

Welcome to Baghdad Cuisine, thank you for your kind comments. I updated the Samoon Recipe with the correct measurements (it is teaspoon and not tablespoon) also I added more pictures. Thank you so much for the correction. The yeast I use is Fleischmann's instant dry yeast (the best way to keep yeast fresh and good to use always is to store the leftover package in the refrigerator). Good luck in making the Samoon and Lablabi recipe. Any further questions I will be more than happy to answer. Also, all your corrections are Welcome. Thank you again.
