Basmati Rice & Chicken Mango 

Basmati Rice & Chicken Mango: 

Ingredient for the Basmati rice:

 

  • 2 cups of your favorite basmati Rice 

  • 4 cups of water 

  • ½ Ibs of angel hair spaghetti

  • Salt as preferred. 

  • 5 tablespoon olive oil

  • ½ teaspoon saffron 

  • 3 pieces of cardamom open 

Direction

In a large pot add olive oil, angel hair spaghetti and cook it until it is golden brown.

Add the water, salt, saffron, cardamom and bring to boil.

Add your rice.

After the water evaporates lower the heat and covers the pot tightly.

Leave it for about 20 minutes, do not remove the cover of your pot until that time, do not use a spoon to flip or turn your rice it will crush the grain, Use a spatula or something flat

Chicken Mango:

  • 3 to 5 tablespoons olive oil

  • 1 chicken breast, cut in cubed

  • 2 soft mangoes, cut in small pieces

  • 1 small eggplant, cut in cubed

  • 2 cups red cabbage, thinly sliced

  • 1 zucchini, cut in cubed

  • 1 green pepper, cut in cubed

  • 1 white onion, cut in cubed

  • 3 garlic cloves, crushed

  • 1 tablespoon ginger, crushed

  • 1 cup cilantro, chopped.

  • 1 cup flour

  • ¼ cup of water

  • 1 tablespoon cumin

  • 1 tablespoon coriander

  • 1 tablespoon black pepper

  • 1 tablespoon curry powder

  • 1 tablespoon all spices

  • 1 tablespoon garam masala

  • 1 tablespoon crushed red pepper

 

Sauce:

Ingredients: 

  • 5 tablespoon Soy sauce

  • 3 Tablespoon Hot sauce

  • 1 cup Ketchup,

  • ¼ cup Dijon mustard

  • 5 tablespoon Chill onion crunches

Instruction:

In a large cooking pot add the olive oil, chicken and let it cook for 15 minutes on medium heat

Add the garlic and ginger.

Add the eggplant, cook for 10 minutes until the eggplant becomes tender.

 

Add cumin, coriander, black pepper, curry powder, all spices, garam masala, and crushed red pepper.

Add the flour and water and mix well.

Add the mango let it cook for 4 to 5 minutes on low heat.

Add the sauce mix well, let It cook for 5 minutes on medium heat.

Add the red cabbage, onion, green pepper, zucchinis mix well, lower the heat and cook for 5 minutes.

Do not overcook your vegetables you want them tender and crunchy.

Add the cilantro
