Rice, Baked Fish, Maraq Bamia (Okra Stew), Iraqi Flat Bread

Rice with garnish, baked Fish, Maraq Bamia (Okra stew), veg salad, and Iraqi Flatbread. 

Rice, Fish & Okra Meal:

Ingredient for the rice 

 

  • 2 cups of your favorite basmati Rice 

  • 4 cups of water 

  • Salt as preferred. 

  • 5 tablespoon olive oil 

  • ½ teaspoon saffron 

  • 3 pieces cardamom open

 

Direction

 

In a large pot add olive oil, water, salt, saffron, cardamom and bring to boil, then add your rice.

After the water evaporates lower the heat and covers the pot tightly. Leave it for about 20 minutes, do not remove the cover of your pot until that time, do not use a spoon to flip or turn your rice it will crush the grain, Use a spatula or something flat.

Ingredient for the Garnish 

  • 2 cups split yellow peas 

  • Water as needed 

  • 5 tablespoon olive oil 

  • 1 big red onion chopped  

  • 2 cups of Almond (should be peeled and cut in half they are available in many stores) 

  • 1 cup raisin 

  • 5 medium-size carrots chopped into small pieces or shredded 

  • 1 tablespoon cumin 

  • 1tablesspoon salt

Instruction:

In a medium-size pot add the split yellow peas and 7 cups of water or as needed. Cook until the split yellow peas are fully cooked and tender. Drain and set aside.

 

In a pan add 3 tablespoons of olive oil and the onion. Cook until the onion is tender. Add 2 tablespoon of olive oil, then add the Almond, cook until it becomes golden brown.

 

Add the carrots lower the heat, add 5 tablespoons of water cover and let it cook until the carrots become tender and the water evaporated.

 

Add the raisin mix well for about 3 minutes then add the cooked split yellow peas.

Add the cumin and salt.

 

Mix all the ingredients together and let it cook for 3 to 5minutes. Add the garnish on top of rice, chicken, lamb, goat, and beef.

Bake Fish

Ingredients:

  • 2 Tilapia fish

  • 2 Tablespoon olive oil

  • Salt as preferred

  • ½ tablespoon Black pepper

  • ½ tablespoon cumin

  • ½ tablespoon paprika

  • ¼ cup dill, chopped

Instruction:

In a baking dish add 1 tablespoon olive oil, then add the fish.

On top of the fish add olive oil, salt, black pepper, cumin, paprika, and the dill.

Bake in a heated oven of 400 degrees for 20 minutes or until it is done.

Maraq Bamia (Okra with Tomatoes Sauce) Okra stew:

Ingredient:

 

  • 1 1b lamb rips or beef cut into medium size 

  • 2 1b okra fresh or frozen. Cut the top and bottom of the okra 

  • 3 to 4 clove garlic 

  • 1 teaspoon crushed ginger 

  • 1 chopped tomato  

  • 1 9 oz can crush tomatoes sauce 

  • 1 9 oz can paste tomato sauce 

  • 6 cups of water or as needed 

  • Salt as preferred 

  • 1 teaspoon nutmeg 

  • 1 table black pepper 

  • 1 lemon juice 

  • 4 to 5 tablespoon olive oil

Instruction:

 

In a pot put the lamb ribs or the beef and fill the pot with water, on high heat and let it cook, remove all the foam that comes up from the meat. 

I like my meat well-cooked, so I usually cook it for about 45 minutes to 1 hour.

Add Water if need until it is well cooked, drain the meat in a colander and wash it with warm water. 

In a pot add olive oil, lamb ribs or the beef, garlic, ginger, tomatoes, salt, black pepper, and nutmeg. Mix very well and let the meat brown.

 

Lower the heat add the okra and cover the pot, let it cook for about 10 to 15 minutes until the okra turns to light color or until its cooked.

In a bowl add the tomatoes paste, crushed tomatoes sauce, lemon juice, and water, incorporate very well then added to the pot of okra let it boil on high

 

lower the heat and cover it, let it simmer and then add the salt. It is done when the sauce thickens.

 

Veg Salad

Ingredients

  • 1 hearts romaine lettuce, chopped

  • 2 small plum tomatoes, diced

  • 1 cucumber, diced

  • 1/2 red onion, chopped

  • 1 cup carrot, shredded

  • 1 cup cabbage, shredded

  • 1/4 cup extra-virgin olive oil

  • 4 tablespoon vinegar

  • Salt as preferred

Instruction:  

In a large bowl add the lettuce, tomatoes, cucumber, red onion, carrot, cabbage, then add the olive oil vinegar and salt.

Iraqi Flat Bread

Ingredients:

  • 3 cups white flour

  • 1 cup wheat flour

  • 2 cups warm water

  • 1 tablespoon salt

  • 1 tablespoon yeast

  • 6 tablespoon olive oil

Directions

In a bowl add the warm water, sugar, and yeast and mix. Leave it for 3 minutes to let the yeast rise.

In a medium-size bowl mix the white flour, wheat flour, salt, 5 tablespoon olive oil, and the yeast mix then knead the dough.

At the bottom of the bowl add the 1 tablespoon olive oil then add the dough back.

Cover and let it sit for 30 minutes.

Roll the dough into small balls and let it sit for 15 minutes.

With dusted flour surface roll dough flat, and place into a cookie sheet or pizza trays.

heat the oven to 500 degrees and put your flatbread for 5 to 6 minutes or until it is cooked.
