Basmati Rice & Mixed Vegetables:




This recipe of basmati rice with a vegetable dish can be turned into a vegan dish just by removing the ground beef. This recipe very well-balanced dietary dish it can be enjoyed at lunch and dinner time.


Basmati rice has a very distinct smell that has a strong aroma especially when it’s cooked. In some places, it’s called the “queen of perfumed rice.” Basmati rice has a lower glycemic index, than any other white rice, also contains a significant amount of fiber. A higher intake of dietary fiber can help to reduce the risk of developing Type 2 diabetes. The fiber in basmati rice is soluble which helps move waste along the digestive tract.


How to plate:

Add the Basmati rice into a large plate

Add the Cauliflower

Add the eggplant

Add the ground beef and the onions

Add the Garnish (Almond and cilantro)

Enjoy!

Ingredients for the Basmati rice:

  • 1 cup Basmati rice

  • 2 cups water or Chicken stock

  • Salt as preferred

  • 2 Tablespoon Olive oil

Instructions For the Basmati Rice:


In a pot add water, salt, olive oil let it boil.

Add the rice let it boil until half of the water evaporates.

Lower the heat covered tightly and leave it for 15 to 20 minutes.


Ingredients for the cauliflower:

  • 1 head cauliflower break the cauliflower into large florets with your fingers.

  • 1 teaspoon Cumin

  • 1 teaspoonBlack pepper

  • 1 TeaspoonCurry powder

  • 1 teaspoon Turmeric powder

  • 4 Tablespoon Olive oil

  • Salt as Preferred

  • 4 tablespoons water


Instructions for the cauliflower:


In a large skillet with a lid add the olive oil.


Add the cauliflower let it cook for 10 minutes on low heat and cover with a lid.

Add cumin, curry powder, turmeric and salt mix well.


Add water cover your skillet let it cook for 5 minutes or until the cauliflower is tender.

Ingredients for the Eggplant:

  • 1 large Eggplants cut into 1/2 inch

  • 1 teaspoon Cumin

  • 1 teaspoon Black pepper

  • 1 Teaspoon Curry powder

  • 6 Tablespoon Olive oil

  • Salt as Preferred


Instructions for the eggplant:


In a large bowl add the eggplant, cumin, Black pepper, curry powder, olive oil, and salt mix well.

Place the eggplant an organized manner on a cookie sheet.

Place in the Heated oven at 400° for about 10 to 15 minutes or until the egg plant are cooked.


Ingredients for the ground beef:

  • 1 Ib Ground beef

  • 1 large onion chopped

  • 1 teaspoon Cumin

  • 1 teaspoon Black pepper

  • 1 Teaspoon Curry powder

  • Salt as Preferred

Instruction for the ground beef:


In a large skillet Add the ground beef and cook for 5 minutes or until half done.

Add the onion mix well with the ground beef.

Add Cumin, black pepper, curry powder, and salt.


Cook until the meat is done and the onions are tender.

Garnish:

  • 1/4 cup almond

  • 1 cup cilantro chopped

  • 1 tablespoon olive oil

Instruction:


You can buy the almond already peeled and cut from any local store.


Or you can buy a whole almond and you do the the peeling and cutting yourself.

In a small pot fill with water add almond and let it boil for 10 minutes.

Remove the almonds from the hot water into a cold water with your hands start peeling the almonds then cut into halves.

In a skillet add olive oil and place the almond cook until golden brown.
