Foul Mudammas (Iraqi Breakfast)

Foul muddamas is traditionally served for breakfast, lunch, dinner, and sometimes is served as a side dish. It is served with fresh warm Iraqi bread. The bread is used to scoop up the fava beans no utensils needed. This dish is very easy to make and very filling.
Foul mudammas, is a very popular vegan dish throughout the Middle East, especially in Egypt which considered Egypt’s national dish Along with falafel and koshari. Authentic foul mudammas recipe, made with hearty fava beans and topped with flavor from ground cumin, fresh herbs, and lemon juice.
Ingredients:
1 canned fava beans 16 oz
3 tablespoon Extra virgin olive oil
1 small onion minced
1 cup green onions
1 cup parsley
1 tomato chopped
1 small green pepper
1 Tablespoon cumin
1 tablespoon coriander powder
1 tablespoon black pepper
1 tablespoon Paprika
salt
1 cup of water
Juice from 2 fresh lemons
Instruction:
Rinse the beans in cold water. Set aside, then continue with the recipe.
In a large skillet, heat 1 tbsp olive oil over medium heat.
Add the onion till it becomes golden.
Add the green onion, parsley, tomato, green pepper mix and cook for 3 to 4 minutes
Add the cumin, coriander powder, black pepper, paprika, salt
Add the fava beans to the pan, then add about 1 cup of water to the skillet. Bring mixture to a boil.
Add the Juice of lemons
Reduce heat to medium-low, cover the skillet.
