Iraqi Lentil Shorbeh (soup)

Lentil soup keeps your soul warm especially during the wintertime when it is so cold outside and you come home to have a big bowl of lentil soup, it will keep you so warm and the taste is so hearty, filling, and tasty. lentil soup will taste even better with homemade fresh Iraqi bread, it will definitely put a big smile on your face. My Mom used to make lentil soup during Ramadan (the month of fasting) almost every day, my father loves it, he would always break his fast with a big bowl of lentil soup. Every time one of my siblings get sick my mom would make lentil soup to help cure their cold, it really works. As I have done for my children as well, when they get sick or have the flue, I would always make them lentil soup and I usually add some tiny chopped chicken with it.

Lentils are a useful source of iron, protein, folic acid and soluble fiber, which help to reduce blood cholesterol. Lentil soup is ideal for vegetarian diets, full of vitamin E and a great diet for heart disease and diabetes. Eating lentils have a great benefit for digestive health, stabilize blood sugar, increases energy, and weight loss.

Ingredients

  • 3 tablespoon olive oil

  • 1 large red onion chopped

  • 2 cups orange lentil

  • 6 cups water or as needed

  • Salt as preferred

  • 1 tablespoon black pepper

  • 1 tablespoon cumin

  • 1 tablespoon coriander

  • 2 tablespoon curry powder

  • 4 cups chicken broth

  • ¼ Ibs Angle hair spaghetti

Direction

Wash and soak the orange lentil for 15 minutes.


In a large pot add the olive oil and the chopped red onion and let it saute for a few minutes.

Add the soaked orange lentil and add the water, cook in high heat for about 30 to 40 minutes.


Add water if you need to keep ¾ of the pot full.


As water dissipates to half of the pot and the lentil is completely dissolved in the water.


Add black pepper, cumin, coriander, curry powder, salt, and chicken broth let it boil


Add the angel hair spaghetti cut into small pieces.


Cook on high heat for about 5 minutes, then reduce the heat and let it simmer for about 10 minutes.
