
Foul Mudammas is a popular Middle Eastern vegan dish. It is found and sold as street food throughout the Middle East. It is a very tasty dish, made with hearty, creamy fava beans and loaded with ground cumin, lemon, and olive oil. It is commonly served for breakfast and it is a very filling dish. In this Foul Mudammas recipe, I am using cooked canned fava beans to save time, also like to add eggs to make this recipe even better. It is served with warm pita bread and sliced veggies. Ingredients:
1 can 16 oz fava beans cooked
1 onion chopped
1 Tomato chopped
3 eggs
Salt as preferred
1 tablespoon cumin
1 tablespoon Coriander powder
1 tablespoon Curry powder
1/4 cup water
1 Squeeze of lemon juice
4 to 6 tablespoon olive oil
Ingredients for garnish:
7 Cherry tomatoes cut in half
1 cucumber cut into circles shapes
1/2 cup olive
1 Tablespoon olive oil
1 tablespoon Sumac
Instructions:
Heat up a skillet and add olive oil
Add Tomatoes and onions cook for 3 to 4 minutes
Add salt, Cumin, coriander powder, curry powder, mix well.
Add water then with A spatula start to press the fava beans let it cook for few minutes until all mixture is incorporated well.
With a spoon make a small circular space in the fava beans mixture then add 1/2 teaspoon olive oil then add the eggs lower the heat and cover the skillet.
Serve the Foul Mudammas:
On a plate add the fava beans and egg, on a side add Cucumbers, Cherry tomatoes, and olives. Spread olive oil and the sumac on top.
