Many Iraqi diets consist of rice, Marqat (stew with meat and most of the time is made of tomato sauce), and salad. These kinds of dishes are must-have in the Iraqi daily diets. This is one of my favorite recipes, it is easy, simple, delicious and hearty. The ingredients consist of red split lentils, minced meat with tomatoes sauce, cumin and black pepper. I do not like to add lots of spices in this dish it overpowers the lentil. The lentil has a sweet taste and a wonderful aroma.
The way the Iraqi people eat it, you would have two separate plates one for the Marqat Adas, and another plate for the rice. With a spoon you will pick up the Marqat Adas then you add it to the basmati rice then you would mix the two ingredients together, you would fill your spoon with the basmati rice and Marqat Adas and eat it. Marqat Adas can be used as a dip as well, take a piece of pita bread and dip it, or any of your favorite bread.
Ingredient:
1 Ibs ground beef
1 chopped onion
5 tablespoon olive oil
1 cup red split lentil rinsed and soaked in water at least an hour or overnight would be better.
6 oz can tomato paste
5 cups water or as needed.
5 cups chicken broth (or water)
Salt as preferred
1 tablespoon cumin
1 tablespoon black pepper
Direction:
In a medium saucepan add the ground beef and let it cook then add onion, and the olive oil cook for few minutes until the onion is mixed well with the ground beef.
Drain red split lentil from the water then add it to the pan with the cooked ground beef add 5 cups of water or as needed until the lentil is fully cooked. Let it cook for about 30 minutes until the lentil dissipates with the mix or until it fully cooked.
Add the tomato paste and 5 cups of chicken broth. Then add salt, cumin,
and black pepper.
Let it boil for 3 to 4 minutes lower the heat and let it simmer for about 20 to 30 minutes.
