Stuffed Chicken Breast with Yogurt Sauce (Iraqi style)

This is the most delicious recipe ever, I love the yogurt sauce with any kind of food it gives it a tangy flavor that I enjoy very much. Yogurt is a very common and popular ingredient in Iraqi homes as well as in Middle Eastern homes. Yogurt is usually on the lunch table almost every day just as is, added with the rice, made into a salad, use as a dip, cooked as a sauce with kubba, meat, and chicken, and made into a drink. Yogurt is the most loved ingredient in Iraqi homes and throughout the Middle East. During my childhood years, I have always seen yogurt on the lunch table as just plain yogurt or in different types of dishes.

Ingredients

  • 1 breast chicken (cut into ½ inch thick) you can get about 6 to 8 piece

seasoning mix for the chicken:

  • 5 garlic cloves crushed

  • 3 tablespoon ginger crushed

  • ½ jalapeno pepper crushed

  • 4 tablespoon vinegar

  • 5 tablespoon olive oil

  • Salt as preferred

  • 1 tablespoon cumin

  • 1 tablespoon ground black pepper

  • 1 tablespoon coriander powder

  • 1 tablespoon garam masala powder

  • 1 tablespoon paprika

Chicken Stuffing:

  • 1 Red pepper cut into ½ inch thin strips

  • 2 cups (or as need) Mint leaves

  • 1 zucchini cut into ½ inch thin strips

Yogurt Sauce:

  • 5 tablespoon flour

  • 3 tablespoon olive oil

  • ¼ cup milk

  • 2 cup Greek plain yogurt

  • Salt as preferred

  • 1 tablespoon black

  • 1 tablespoon cumin

  • 1 tablespoon cumin seeds


Instruction:

preparing the chicken:

Using a filet knife (a sharp thin blade) cut the breast chicken about ½ inch thick, then use a meat mallet to pound to an even thickness.

Chicken Seasoning:


In a large bowl add garlic, ginger, jalapeno pepper, vinegar, olive oil salt, cumin, black pepper, coriander, garam masala powder, and paprika and that the seasoning mix for the chicken.


Yogurt sauce:


In a large bowl add the flour, milk and the olive oil mix very well then add the yogurt, black pepper, cumin and mix very well.

Prepare the chicken:

Take one of the cut pieces of chicken.


With a brush spread the seasoning mix into the chicken.


Add the mint, red pepper, and zucchini on the edge of the chicken breast then rolled it,


Secure it with a toothpick to keep everything intact.

In a pan add 3 tablespoon olive oil


Add the rolled chicken in the pan on a low heat

Make sure to cook the chicken all around.


Cook for about 7 to 10 minutes.

Add your sauce put on high heat to boil,

lower the heat, cover and let it simmer for about 10 to 15 minutes.

Garnish with cilantro and enjoy this heavenly dish.

You can serve it as is or with basmati rice
