
Baytinijan Maqley is fried eggplants, it is usually added to many of the Iraqi sandwiches, which truly can add an extra kick to the sandwiches and more enticing taste and flavor. In this recipe I have made fresh homemade Iraqi bread samoon (the recipe on the website) where you can open it from the side to build the Baytinijan Maqley sandwich, I started with the kabab maqley (the recipe on the website) then I add the Baytinijan Maqley, the fried onions, lettuce, parsley, tomatoes, mint or basil and top it with tahini sauce or yogurt sauce both recipes are available on the website and finally garnished it with sumac. It is truly a Wow sandwich and the taste flavor is extremely wonderful they just go so well together. I love eggplants and this sandwich really brings the taste and flavor of the eggplants, when I eat this sandwich I am truly in heaven.
The Iraqi people eat their heavy or their big meal at lunchtime around 2 pm. The dinner times it usually around 7 pm or 8 pm and it is very light food that consists of sandwiches of Kabab, falafel, cheese, salad, olives, watermelon, and a must Iraqi tea.
Ingredients
Kabab Maqley (check out the recipe on the website)
Iraqi Bread (Samoon) (Check out the recipe on the website)
1 large eggplant cut round
2 large white onion cut round
Salt as preferred
1 tablespoon Coriander
1 tablespoon black pepper
1 tablespoon allspice
1 tablespoon nutmeg
2 tablespoon ground sumac
¼ cup corn oil or as needed
Instruction
The kabab Maqley and Iraqi bread Samoon both recipes already available on the website under Iraqi recipes and lifestyle.
In a large bowl add the eggplants add half of the ingredient of the black pepper, allspice, nutmeg, and salt.
In a large bowl add the onions add the other half of the ingredient of black pepper, allspice, nutmeg, and salt.
In a cooking pan add the corn oil and fry the eggplant until they are fully cooked add oil as needed. Also, fry the onion until they are tender.
Start to build your sandwich
Open the samoon sideways
Add the kabab Maqley
Add the fried eggplant
Add the fried onion
Add your favorite vegetables
Add your favorite sauce tahini sauce or yogurt sauce (both recipes on the website)
Then garnish it with the sumac.
