Lahm b-'Ajeen (Meat and Dough)

I love this recipe, it is so tasty and easy to make, but take time due to the rise of the dough otherwise, it is very simple and easy recipe to make. Lahm b-Ajeen can be eaten at any time of the day, it is easy breakfast to go, for lunch and dinner, a snack or even as an appetizer. It is soft, tender, and very tasty especially when it just come out of the oven the smell of fresh bread, sizzling hot and the smell of the meat and the spices make it a heavenly dish to eat at any time of the day. You must have it with Iraqi tea (Iraqi tea is very heavy and sweet at the same time) There are two ways to make this dish one with a flatbread by flatting your dough then place the meat on top. The second way is my way is long bread like the Samoon bread then place the meat in the middle of the Samoon bread and bake. I truly like it this way because you can easily pick it up and eat it by using your hand. You can make a large quantity of Lahm b-Ajeen and cover individually with a plastic wrap and store in the refrigerator and can eat it at any time.

Ingredients for the ground beef mix

  • 2 pounds ground lean beef

  • 3 medium onions finely chopped

  • 2 tablespoons olive oil

  • 5 tablespoons tomato paste add about ½ cup of water mix well

  • 1 cup chopped parsley

  • 1 cup chopped cilantro

  • 2 teaspoons cumin

  • Salt as preferred

  • 1 tablespoon black pepper

  • 1 tablespoon allspice

  • ¼ teaspoon chili pepper

Instruction for the ground beef mix

In skillet pan add meat, onions and olive oil to fully cooked then add half of the parsley and half of cilantro, cumin, black pepper, allspice and chili pepper mix well for about 3 to 4 minutes then add the tomato paste and add water stir and mix well let it cook for 3 to 4 minutes until everything is mixed well.

Ingredient for the dough

  • 4 cups of warm water

  • 4 tablespoon yeasts

  • 2 tablespoon sugars

  • 6 cups white flour

  • 2 cup wheat flour

  • 2 tablespoon salts

  • 5 tablespoon olive oil

  • 3 tablespoon sesame seed

  • 1 egg

Instruction

In a bowl 2 cup of warm water (you can put your finger in it without remove in it) add the yeasts and the sugar and leave it for 3 to 4 minutes to rise.

In another bowl add the white flour, wheat flour, and olive oil. Mix the ingredient well. Then add the yeasts mix, and two cups of water, then mix well and knead the dough. In the bottom of the bowl add ½ tablespoon of olive oil then add the knead dough on top, cover and let it rest for 30 minutes.

Roll the dough then flatten the middle part of the dough and keep the edges small. Then add them into a greased baking sheet. Let it rise for 30 to 40 minutes.

After the dough has risen then in a small bowl crack an egg and mix well then glaze your dough with the egg and the sesame seed. With small spoon press, the middle part of the dough Then spread the meat mixture on top of the bread.

Bake in a heated oven of 400 degrees for about 20 to 30 minutes or until golden brown. Then take the rest of the parsley and cilantro and spread on top.
