Marqat Fasolia is a typical Iraqi dish and is one of my brother favorite dishes, he would literally eat it every day. My brother was the 5th child out of 4 girls, every time my mom has a girl she used to cry because she wanted a boy to carry my father’s name and take care of the family when he grows up. In almost in every country and culture that I know of, men would always want a son and the Arab culture is no different, but my father did not care. My mom used to say, “that every time they announce it is a girl, your father would have a huge smile on his face and thank Allah for the blessing that he has received and he would laugh at me say Alhamdulillah (Thank God) we are blessed with a healthy beautiful girl”. Mom said that relative and neighbors used to call your father “Abu bnat” which means the father of girls. When my mom had my brother, she could not believe it, so she always held a special place in her heart for him. She would always cook the dishes that he likes and she would make a different dish for the rest of the family to please everyone. She would always make him Haricot Tarbais Bean with meat stew, rice, and salad that was his favorite meal ever.

I hardly cook this dish, but when I made it for my family they really like it especially my husband, when I served it to him, he really enjoyed it, as well as my children. As I grow up in America for a while I have stopped cooking these traditional Iraqi dishes and even forgot about them, by starting my Baghdad cuisine website it really brought so many memories of back home and these wonderful, unique and different recipes that I have been cooking and share it on my website and with all of you. “I am so glad”

Ingredient

  • 2 cup dry white bean, soaked over-night.

  • 1 lb lamb or beef cut in cubed

  • 4 tablespoons corn oil or olive oil

  • 1 8oz can tomato past

  • 1 16 oz crushed tomatoes

  • 3 cups of water

  • 4 clove garlic diced

  • 2 tablespoon cumin

  • 2 tablespoon black pepper

  • Salt preferred taste.

Directions

In a pot add the soaked white bean and fill the pot with water and let it cook on high heat, until it is fully cooked. You will know it is fully cooked when the bean is tender.

Put the lamb or beef meat in a pot and cover with water until completely cooked

in another pot, add the oil, fry the garlic add the cooked lamb or beef and let it brown for 3 to 4 minutes add 1 tablespoon salt, then add the cooked white beans and mix.

In a bowl add the tomato paste, crushed tomatoes, water and mix very well. Add it to the meat and white beans mixture, add the salt, pepper and cumin and bring to boil for about 10 to 15 minutes until the sauce thicken, then lower the heat and let it simmer for about 30 to 40 minutes. In Iraq home this dish is always serve with rice and green salad.
