Bread with Zaatar

Bread always take me back when I was little girl in Baghdad, I would walk to the bakery to get Samoon (Iraqi type of bread) it was always made fresh. I pick the Samoon as soon as it comes out from the oven, it is super-hot, it smells so good and I would always eat one on my way home.

Bread is one of key food ingredient in every meal and the most popular food prepared around the world, it is also prepared in many ways. Bread is oldest reproduction foods has been recorded throughout the history and been important agriculturally.

Zaatar is made with ground dried thyme, oregano, marjoram, and mixed with toasted sesame seeds, salt, and sometimes they add sumac spices. Zaatar is savory in taste, is mixed with olive oil and used as a dip to dip pita bread with. I use zaatar on my salad, over labneh (thick Arabic yogurt), with cream cheese and feta cheese.

You can cut the zaatar bread into half’s and add your favorites ingredient in it, I like to eat it with cheese, olives, cucumber, tomatoes and mint. It makes perfect small sandwiches to eat. I Love bread in general and love the smell of hot fresh bread. My children and husband will eat the zaatar bread as soon as it comes out of the oven. Thumps all the way up for this Zaatar bread. Ingredient

  • 6 cups white flour

  • 1 cup wheat flour

  • 2 tablespoon salts

  • 5 tablespoon olive oil

  • 3 ½ cups of warm water

  • 3 tablespoon yeasts

  • 1 tablespoon sugar

  • 1 egg

  • ½ cup Zaatar

Instruction

  • In a bowl 1 cup of warm water (you can put your finger in it without remove in it) add the yeasts and the sugar and leave it for 3 to 4 minutes to rise.

  • In another bowl add the white flour, wheat flour, salt, olive oil, 2 ½ cups of warm water and the yeast mix, then mix well and knead the dough. In the bottom of the bowl add ½ tablespoon of olive oil then add the knead dough on top, cover and let it rest for 30 minutes.

  • Cut your dough into small circle shape balls add them into greased baking sheet. Let it rise for 30 to 40 minutes.

  • After the dough risen then in a small bowl crack egg and mix well then glaze your dough with the egg, add the zaatar over it.

  • Bake in heated oven of 400 degrees for about 20 to 30 minutes or until golden brown.
