
Couscous is a main dish in North African cuisines of Morocco, Algeria, Tunisia, Mauritania and Libya. This dish became very popular in the middle East also in Europe and United States. Couscous is light and fluffy when it is cooked, it is very easy and simple dish to cook. I like to cook couscous with mixed vegetables and use it as a side dish, I usually add Tilapia and Macaroni salad with the Couscous to have a full meal. It is very light, healthy and very filling. You can cook this recipe in less than 30 minute.
Ingredients
2 cups of couscous
2 cups of mix vegetables
2 cups of chicken broth or water
½ tablespoon of nutmeg
½ tablespoon of black pepper
½ tablespoon of cumin
Salt as preferred taste
2 tablespoons of olive oil
Instruction
In a pot add the mix vegetables and olive oil and let it cook for about 3 minutes until the vegetables are tender, then add the cumin, nutmeg, black pepper, and salt.

Add the chicken broth and the couscous, stir the mix until the water is all gone. Lower the heat and cover for about 7 to 9 minutes.


Plating:
On the side of the couscous dish, I like to add Tilapia and macaroni salad to have a full meal.
